I managed to get it working. It was too simple. I deleted the whole
installation, which I originally complied along with an RPM the second
time. This time I just did an RPM, and didn't touch anything, and
logged right in. I must have been playing with it too much.

I can telnet to the server: telnet localhost 143
It says that Courier-Imap is ready
Then I try to login: a001 LOGIN pnolan password
And it says a001 NO Login failed
So I take a look in the logs and it says:
Mar 4 09:57:04 houstonlinux imapd: Connection, ip=[::ffff:127.0.0.1]
Mar 4 09:57:21 houstonlinux imapd: LOGIN FAILED, ip=[::ffff:127.0.0.1]
Mar 4 09:57:34 houstonlinux imapd: LOGOUT, ip=[::ffff:127.0.0.1]
Any Ideas as to where to begin?
