Thanks, Sam; my mistake was in not realizing that the "from" domain was part of my shell environment, and not something that gets looked up every time mail is sent. My settings were correct, I just needed to restart my user session for them to take effect, at least as far as mutt is concerned.

I presume you mean $sysconfdir/defaultdomain, with sysconfdir defaulting to either /usr/lib/courier/etc, or /etc/courier (depending on which installation script you used).
