I can u/l the xen-syms no worries, but all I have is a bzImage, is that a problem?

xen-syms aren't much use as it was a Linux crash. I'm afraid you'll need to repeat and keep the vmlinux file. You might find the 'install' make target useful as it's careful to keep both the config file and vmlinux files along with the stripped vmlinuz.
