Yes, google talk Video Support would be nice. I guess they are working on it. At least the xmpp spec has been "at work" for long time now:

But not by any google engineer (as audio was). Hope they will use it soon.

As for conferencing on my Mac with PC users... MSN doesn't support video for Macs (sux anyway) and Mercury is too slow and is video only (no voice). Skype works OK but now I'm telling all my firends who use MSN to get Skype in addition to Google-talk.

Apple is supposed to be releasing iChat for PC but you can already use Google-talk on it as a jabber client. Maybe Google can beat them to the punch if we lobby hard enough.
