We use OE and Outlook 2000 on all of our client machines accessing accounts via IMAP and have not really had "trouble" per se. Actually OE seems to require switching back and forth between folders so that when you end back at the inbox for a given account, you actually find if you have new mail or not. So, personally, I am (along with other users of my site) not experiencing problems with using Outlook 2000. (I migrated from Exchange at my old job to using qmail/vmailmgr/courier-imap and find that things run much quicker/more stable, even with sticking with the MS OE/Outlook clients on the client side.)

In Outlook-Express you need to adjust the Synchronisation Setting for the appropriate mailbox. I have found that setting it to "New Messages Only" seems to work best with Courier-IMAP and "Headers Only" for UW-IMAP.

You may want to enable the "IDLE" capability in courier-imap-1.3.5 but be warned that if you want to move mail from one IMAP-Server to a Courier-IMAP server you will see problems however moving messages from one folder to another in your account with Courier-IMAP will not present any problems. More testing needs to be performed to see what does and doesn't work.
