Courier does not have any builtin attachment scanning. But you can easily integrate MIMEDefang http://www.roaringpenguin.com/penguin/open_source_mimefang.php or SpamAssassin, have them called globally via a global maildrop filter and get them to pull out those annoying win32 executable attachments.
