my mailqueue is 80% bounce notification requests for mail trying to be delivered to non-existant addresses on the server.

This means that your server's configuration is screwed up. Courier does not normally accept mail addressed to nonexistent local mailboxes.

this is one technique that spammers use to find out what the real addresses on a server are.

Correct, which is why Courier refuses anything addressed to nonexistent local mailboxes. If your server for some reason accepts all mail, and then tries to bounce nonexistent addresses, it means that your server's configuration is doing something stupid.
