How big are the attachments? If they are greater than 10MB then you will need to increase the message size by creating the sizelimit file. This file normally lives in your configuration directory. (On my box it is /etc/courier). Out the appropriate size in bytes.

If they are smaller then 10 mb then I would suggest trying it in a different program first to try to narrow down if it is an Outlook problem or a possible configuration problem.
