As Thunderbird is a descendant of Mozilla Mail it should be easy. In the directory where Thunderbird stores it's configuration create a file called user.js and put the following line in it:

user_pref("mail.check_all_imap_folders_for_new", true);

Ypu also have to set IMAP_CHECK_ALL_FOLDERS=1 in the config file of Courier-Imapd.
