I think that I don't get what you mean by $CERTFILE, would I end up having /etc/courier/esmtpd.pem.a.b.c.d; /etc/courier/esmtpd.pem.e.f.g.h::i:j ?

Whichever IP address you see logged, append exactly as it appears to esmtpd.pem

Logged ? I already know the ip address of my server, we are taking about the ip addresses of the server, right ?

If you telnet from the itself server to one of its own IP addresses, the source and the destination IP address will be the same, it will get logged in syslog, and you can see exactly how the IP address is formatted, and how to name the certificate file.
