I added a user called courier-imap, extracted the source in the /home/courier-imap directory which then created courier-imap-1.7.0/ .. and this is where I ran the ./configure script from. Is this correct, and could this be the cause of some of my confusion.

Just login as a non-root-user, extract the tarball somewhere below ~/ and follow INSTALL.
