Even so, why not just tell the email client to offline sync to the courier server instead of a separate IMAP server?

Because Thunderbird does not successful sync and back-sync? Can thunderbird to thing like "offlineimap"? AFAIK not!

I don't know. Outlook Express has done it as long as I can remember, download
all offline folder mails, remember every action on every folder, and when the
client goes back online, resync to the master. If Mozilla software can't do it
too, I'll be _very_ surprised.

1) If he is in the office he need the messages on the intranet server

2) Connect from Lin/Win -> courier-imap

3) If he go on voyage he need to sync his laptop with a bunch of folder on the IMAP -> offlineimap runing on Intranet server -> mercury

4) Shutdown the fetchmail daemon on the intranet server

5) Download the messages with e.g. thunderbird and push it into the mercury

6) Some days/weeks later he is back in office and disable fetching on the laptop and sync-back anything on the mercury with courier.

Mercury has a built-in POP retriever too, so you could have that automate
fetching mail for Thunderbird. But that still leaves you with syncing between
two IMAP servers. He would have to know what was new and push it back to
Courier when he got back using Thunderbird. There is no automatic way to do
that, AFAIK, except tools like imapsync that you run to sync between two IMAP
servers.
