On my Courier server, one of my users keeps getting this message from a mailing list that she has signed up for: [...] She would like this email to arrive in the format it was intened because it makes it really hard to read. Is there any way to specify any sender's address that is excluded from this "safe message conversion", or is there any other solution I can use?

I suppose your Courier is set up to reformat corrupted/invalid MIME-formatted mail as an attachment. See "man courier" and look for BOFHBADMIME. You might be able to set "BOFHBADMIME=accept" for the offending mailing list's mail server (or servers).

Meanwhile, tell the mailing list admin to stop sending broken mails.
