Have your procmail create the maildirs if they don't exist.

Furthermore, this is really not a good idea, unless you are well-versed in security-related issues, or based your script on someone else's, who is well-versed. Post your procmail recipe. Nearly every similar mail filtering recipe I've seen, in the past, have gaping security holes that can be easily exploited using carefully-constructed E-mail messages.
