I really don't want to have to symlink everything in ~/mail over to dot files in ~/Maildir. My folder names change by the month and redoing a bunch of symlinks every month would be a major hassle.

If you configure Mutt to use use IMAP, you shouldn't have to link anything. That's how I've got pine set up, and my local ~/mail directory is completely empty. All of pine's folders are just subfolders of the IMAP INBOX.
