ok,

but can't we make the client point directly to a subfolder of the mailbox as if it were the "root" one? For instance, accessing ~/Maildir/domain1/ as if it were ~/Maildir ?

No. After authentication, the IMAP server will only be able to access that account's mailbox.

Unless, of course, you've set up virtual shared folders, in which case access will be subject to access control lists.
