Well, one thing that you can't do with IMAP is to waste a full day restoring a backup mail store from tape, in order to recover from a corrupted database.

Also: ask them to benchmark Exchange against Courier-IMAP. One benchmark I've seen shows Courier-IMAP serving mail four times faster than Exchange. Sadly, it's been pulled from the web.
