This looks like a linux networking issue rather than a Xen one, but I'm interested in the soloution. I suspect bridging and bonding aren't normally used together. You might want to consider using a routed xen setup e.g. with the network-route and vif-route scripts.

Back to bridging, what happens if you use bonding for high-availability active-backup rather than link aggregation? (mode=1 when loading the bonding driver, as I recall)
