Do you want to remove the Reply-To munged by the list or do you want to add one of your own? What would go into your own header?

You should be careful to change this header, as you might information required to reach the sender. At least check wheter the header is already set before munging it.

Can anybody point me in the right direction?

Use xfilter to run the mail through reformail(1).
