You shouldn't need to do anything. If the 'courier' user exists, Courier will use it.

I built courier 0.47 (my current mail server is running that still) and I'm sure I recall the docs saying something about a configure option for the uid and gid, but I don't see it in the Installation Guide for the current version.

There are configuration options '--with-mailuser=courier --with-mailgroup=courier', but as I said above, you shouldn't need to use them if your username is 'courier'.
