IMO, the best is http://www.courier-mta.org/?install.html but first read the complete document once or twice and then start your configuration step by step. The first time will be a few hours but for later installs you will be able to measure it in minutes.

P.S. BTW, this is basically the same as the INSTALL doc that comes in the distribution.
