You can initialize HOME and DEFAULT manually, as the first order of business.

thinking maybe I could set it in the mailfilter file, but does this get scanned for environment variables before processing /etc/maildroprc?

import works in the specified filter file or /etc/maildroprc, so you can use import to bring in the variables.
