Lookout Express for windows has a configuration option to use the sent-date instead of the received-date for date display. I'm not in front of my windows machine right now, so I couldn't tell you where the setting is (and it may be different on a mac) but it solved this problem for me.

The linux client I'm using (mulberry from http://www.cyrusoft.com/) lets you control the items to display in the message list, and provides both sent-date and received-date as options.
