What is the best way to configure authentication for courier? authpam or authldap?

authldap

Or is my problem only solved by switching the authentication method to authldap? (Is there SSL/TLS support for authldap?)

There is no support for SSL/TLS in authldap.

This is a feature that could really be used. Currently, the only way to semi-secure the authldap queries is to run an LDAP server replica on your mail server or use S-Tunnel on both ends.
