Well I did gmake install, but I'll give a make install a try first.

Ok, I'm using FreeBSD4.0r, far as I can tell the installation of courier worked, now I'm trying to do the Test child process termination test. When I run "/usr/lib/courier/sbin/courier start", the file "/usr/lib/courier/var/tmp/courierd.lock" is created. None of the processes that should be running are running, and I find "Jul 8 17:38:23 cornfed courierd: No such file or directory" in my logs.

Any idea's on what's going on here, or how to figure out what file can't be found?

Try to do make install again. Something wasn't installed correctly.
