No. The complete instructions for setting up incoming SMTP are described in the INSTALL file.

This brings me to another question, since this is basically a brand new install for the entire box, once its live ill be migrating to it from a live server, now would be a good time to switch to IMAP wouldn't it? I can can the esmtpd server then right?

It's two completely independent modules.
