5 seconds after I sent this I solved it. I just created a variable like so:

SPAMFOLDER = "$HOME/Maildir/.Junk E-mail"

# Filter spam into SPAM folder if (/^X-Spam-Flag: YES/) { to $SPAMFOLDER }
