There is a script named "mb2md.pl" which should help if you are going to use the Maildir format.

I am installing a new mail server that is going to be using POstfix + Courier + mysql my current web server is using Sendmail + UW IMAP I am currently only using POP3. When the configuration is done and tested, is there an easy way to move the current mail from one server to the other. The current server has around 200 email accounts. Thanks in advance.
