Can't courier be "patched" to change it?

Well, of course, because you can download the complete source code, and make any kind of changes your heart desires. There's absolutely nothing that prevents you from doing that, with only a small footnote that if you choose to redistribute your changes, you must make sure to comply with the relevant GPL terms.

But, if you want someone to do this for you, just because you want to, then I really think you do not fully understand what this “free software” deal is all about. That's OK, actually. Neither does Microsoft. You're in good company.

Now, you admit that you do not have much experience with IMAP. That's OK, go read RFC 3501. If you come back and say that it's too long for you to read, you can't bother with that, and you just want someone to hand you an answer on a silver platter, the I can guarantee you that nobody will help you, at all.
