Yes my DEFAULTDELIVERY was ./Maildir changing it to DEFAULTDELIVERY="|
/usr/lib/courier/bin/maildrop" worked.
I am still a bit confused about the divrance between ./Maildir and
/usr/lib/courier/bin/maildrop since I was under the impresion that
maildrop was used as the default MDA.

What is your DEFAULTDELIVERY in /etc/courier/courierd set to? Note that
courierfilter is the MTA (Mail Transfer Agent, host to host) filtering
system for Courier. Maildrop is the MDA (Mail Delivery Agent, host to
mailbox) filtering system for Courier. I do not believe there is any way
for regular users to specify courierfilter rules for delivery. Per user
filtering is done via .mailfilter.
