Hello.

I would like to find out if maildrop, when configured in maildir format could perform server side filtering?

That's what it's supposed to do in the first place.

If so, how would subfolders be organized?

See the maildirmake man page, and simply tell maildrop to deliver to the maildir folder.

Is Cyrus-IMAP compatible with such filtering?

No. Cyrus-IMAP uses a customized mail storage format that is not compatible with anything else.

On the website of maildrop, the docs say that such filtering is possible

You misread something.

I understand it, maildir eliminates the need for locking so does that mean use of NFS is safe?

Yes.
