Courier does not do dynamic SPAM specific filtering on it's own but has powerful filtering capabilites that can call external spam programs such as Spamassassin, Popfile, ClamAV, Amavis and many other filtering solutions, Google for howtos that detail setup (i.e. "Courier Maildrop Spamassassin" turns up multiple howtos) or read the docs regarding maildrop and courierfilter on the courier-mta.org website.
