I am aware that courier automatically determines supprot for SSL, but I thought it was noteworthy to point out that I at least got a response back from my ISP mail server when the option was enabled.

That wasn't a response from your ISP's mail server. That was Courier itself informing you that your ISP's mail server does not implement this specific Courier-only protocol extension.
