I'm running Postfix + Courier IMAP on Fedora Core.

You'll need to invoke reformime with the -x option.

This is fairly complicated, and very tricky to get right. Read reformime's man page. Slowly.

I also discovered another option. It is the munpack program. Google helped me find the source code. After a couple of minor edits, I had it built and tested. Works fine.

I'll look at reformime as well and report back with pros and cons versus munpack.
