I had this problem and I believe I created a file /etc/courier/defaultdomain and put my domain in there... as in

# echo love.com > /etc/courier/defaultdomain

sift through the mailing list archives or read

http://www.courier-mta.org/courier.html

I know that is where I found the answer.
