Is there any way to tell maildrop stop telling this information via configuration?. I'm checking the source and found the class Except which seems to have the method which prints the error messages.

Postfix is designed to be a bit chatty in its logs. I don't think it's possible to turn down the logging of postfix, only turn it up. But you should ask that on the postfix list.
