I found a suitable rpm package (Postfix 2.1 even) and it installed. Perhaps I won't need to use Maildrop for this particular task, but it would still be nice to find out more about writing my own Maildrop filters so I can filter based on Spamassassin headers.

Why not use SA via /etc/postfix/master.cf ?

I had not considered that. Spamassassin is running from spamd/spamc. I have never run it from master.cf though I have done so via amavis-new on another machine. I am not sure if doing it that way would offer advantages.
