Well, the problem is that the domain in question has broken DNS. Therefore, instructing courier to look itself up again will obviously cause it to find the same broken DNS. Therefore you have to explicitly tell courier what you want it to do; i.e. in this case give it the fixed IP where you want it to deliver mail.
