I just tested with the same settings you have, I am running the latest build of thunderbird. It works fine for me with your configuration #2 I can see the folders properly and I select each of them.

Offhand I don't know, this particular server is from the debian packages. I am pretty sure it does use --enable-workarounds .. I will try to check into it unless anyone knows offhand. I didn't even think about it at the time.
