I'd like to view a list of all the issues assigned to me but I can only see them filtered by projects.

Is there a view a missed ?

When something that obvious is missing, it's probably because I don't use it the way it's intended.

I did look at the wiki, but didn't find an explanation about the best practice for working on several projects.

I suppose that at mysql you use it for your paid support.

How do you organise the projects ? Do you create one project per customer (the way I'm trying to do it, but doesn't seem to be the smartest way) ?

What is/are the projects in your case ?
