You probably need not use maildrop.

What I need to do is fetch email from a single pop account (it's a catchall email account) from my web host (xy@domain.com) and then sort it locally for about 300 users.

This is called multi-dorp mailbox. How do you download/fetch the mails? If you are using fetchmail, fetchmail supports it directly. Getmail also supports it. You don't need maildrop for that.
