Yes, but what if there are like 15 MX records with the same priority ? (like hotmail, hanmail etc ..)
Then that's just one more place with screwed up DNS.

Or does Courier continue to try every IP for an A record?
Yes -- hosts with multiple IP addresses will have all them tried.
