Set up a mail alias, where any mail addressed to the alias ends up going to admin's mailbox.

Then simply use 'cc "!alias"' in the maildrop recipe.

Make sure that this cc is skipped when the current mail delivery is to the alias itself (else you'll quickly run out of disk space).
