A quick follow-up, as I continue to re-read the docs, is there a way to properly reclaim this disk space, after I've gone back to the default settings for these two parameters?

It is the restart of the management node first then rolling node restart with --initial. The --initial option will clean up all the old data node files and thus will reclaim your disk space. As I said in another post, I suspect that you did not restart the management node first before doing the rolling restart of data nodes with --initial.
