Dangit, and I thought I had the hang of it.

Ah well, it doesn't matter anyways. My original failure came from trying to build from a source RPM. It bombed the first couple times I did it, but worked just fine this most recent time. I have no idea what changed to allow me to build this time, but I'm going to assume that it's something weird with my environment.
