Bounces to forged return addresses are neither normal, nor reasonable. Only a small minority of mail servers behave in the manner that you think is normal.

Believe it, or not.

We use a pretty standard installation of the second most popular mail server in the world.

Sam's life is (generally :) nothing but e-mail; I expect he knows every MTA there is better than you know your own (especially Qmail). What he and Jure advocate is nothing but common knowledge and practiced by all savvy mailadmins (including me, Postfix 2.2).

If you have no control over your backup MX you should probably not use a backup MX at all (my site doesn't); pukka MTAs will keep trying to send you mail for 3 to 5 days if your MTA is down. But that's a topic for your Qmail list.
